Hello,
I am wondering about nettles versus stinging nettles in food preparation. I bought some stinging nettles at the farmer's market yesterday and found a recipe on epicurious for walnut nettle pesto crostini. At the market, they said to put the stinging nettles in hot water and that will take the sting out. The pesto recipe calls for them to just be thrown into the food processor with the rest of the ingredients. I like the people I am having over for dinner a lot and don't want to hurt them.

About Stinging Nettles.

Don't worry about stinging people. The food processor will take the bite out of them. I never put them in hot water first, I just prep them with gloves on then go about using them in a recipe (except for salads - don't use them raw in salads).
