This looks like a very sound recipe. Except the raw egg added to the whipped cream? Why risk poisoning your guests, when whipped cream (especially when using high quality cream) is such a perfect thing unto itself?

This looks fantastic; may have to include this in the Thanksgiving line-up. A note to Diane: the raw egg is not going into whipped cream. It's part of an egg wash to create a glossy crust for the top of the pie. The egg wash (with cream) is applied to the top of the pie, then baked, so it's not left raw. Hence, no worries!
Thanks Eversince! I was just going to correct myself after reading through the instructions more carefully--and you beat me to it. :-)
I am making this for tomorrow's feast--a fun variation from my usual apple pie. Will let you know how it turns out. Happy feasting, everyone.
